I am here to excitedly inform YOU that I have developed that special dish. Welcome, the simple roasted carrots recipe.

Simple is sometimes the best. I learned this after several trials of these roasted carrots with my friends and family. After lots of carrots down the ol’ hatcho, I can confidently say that these basil and honey glazed roasted carrots are the REAL DEAL.

The combination of honey and basil is just enough to convince your little ones to go in for not one, but TWO bites.

Plus, the preparation is so simple it’s almost painful to think that you may have been overlooking this fabulous recipe.

It simply consists of 1)washing and peeling your carrots 2) arranging the carrots on a parchment paper lined cookie sheet 3) dousing and rubbing the carrots in olive or coconut oil and dry basil4) sweetly drizzling your honey of choice over the carrots.

Then, all that will be left to do once you complete these steps is slow roast and then cool your carrots. What will result after you finish slow roasting is a lovely aroma of sweet roasted carrots, and a dish that is….

     slightly salty

     soft

     sticky

     caramelized

     & tender

I know what you’re thinking, and yes- it’s that simple. Plus, the fun part for your littles is that you can let them pick up a larger than life carrot and take a bite. My boys think it’s the coolest thing.

If you do decide to bring it to a party or potluck- the presentation is SO EASY. Just get a pretty serving platter or rectangular plate and line up your carrots, side by side! Drizzle a little more honey, and, if you’re feeling fancy, tuck some fresh basil leaves around the carrots. Voila! A gorgeous dish that YOU MADE. And if you’re feeling really adventurous in the healthy feeder department, you can pair these carrots with a nice green salad that highlights a flavorful dressing, such as my favorite 3 Ingredient Avocado Dressing.

Instructions
  1. Preheat oven to 350 degrees F.
  2. Peel and wash carrots. (Peel off rough area of carrot tops as well, if desired) Arrange on a baking sheet lined with parchment paper.
  3. Drizzle olive oil over carrots. Rub oil into carrots with hands.
  4. Sprinkle basil and salt over carrots and then drizzle the honey.
  5. Place baking sheet with carrots on a oven rack that is close to the middle of the oven.
  6. Roast for 50 minutes, rotating the carrots at 25 minutes to ensure even cooking.
  7. Check on carrots periodically, especially near the last 10 minutes of the roasting period. This will ensure that the carrots are not beginning to burn, as oven heat tends to vary in intensity.
  8. After 50 minutes has passed, remove carrots from oven and allow to cool slightly. Serve immediately or place in Tupperware. Leftovers can be kept in the refrigerator for up to 2 days.
Recipe Notes

FYI: Large, organic carrots go a LONG way. The flavor, in my opinion, is way BETTER than buying non-organic. This is ultimately your choice, but I had to let you in on that tip 🙂
